This rice and beans dish is an aromatic treasure chest that is comforting and spirited. For a lighter pairing, we converted the traditional spinach leek fritters into a sauteed green medley. Cardamom roasted cauliflower complement the other sides.

Local sweet potatoes are baked and cooked in a cinnamony-coconutty broth topped with maple spice pepitas. The soup is paired with a sauteed kale, orange zest, and roasted veggie salad.

Gigantes Plaki means "big beans". This oven-baked Grecian delight features butter beans, stewed tomatoes and fresh herbs making for a big flavor that lives up to its name. Served with a lemon rice pilaf and Grecian-style boiled greens.
Ash-e-Reshteh is a traditional Persian soup that celebrates the Persian New Year (Nowruz). Vibrant fresh herbs, tender beans, and noodle make for the ultimate comfort soup. We swapped out traditional wheat noodles for a spaghetti squash or veggie noodles. Paired with a roasted veggie salad tossed in a date-based dressing. (Grain free meal)
